Raw 'Smudge' Bites (Vegan, Paleo)

What's a girl to do when she's got a box of fresh dates, a half a jar of almond butter and a craving for something chocolatey, gooey and simply out-of-this-world delicious? She creates raw smudgies! These delectable little bites are sure to satisfy even the strongest sweet tooth and are made of raw, healthy and nutritious ingredients. Medjool dates are nature's candy! They supply us with an irresistible sweetness and a punch of nourishing vitamins and minerals like potassium and magnesium. What about protein you ask? No fear, the addition of almond meal and creamy almond butter supplies the body with a healthy dose of plant-based protein and healthy fats that will satisfy your insides as well as your appetite. For those of us who like a little sweetness with our morning coffee or tea, these little babies are great in the morning, as a late afternoon pick-me-up, as dessert or a late evening snack before bed. Ingredients

12-14 Medjool dates, pitted (use softer dates if possible)

1/4 cup almond meal 

2 tbsp. almond butter

1/4 cup unsweetened cocoa powder (or raw cacao powder if available) + 2-3 tbsp. for coating

1 tsp. vanilla

1-2 pinches sea salt 

2 tbsp. unsweetened non-dairy milk (I use Trader Joe's unsweetened almond milk)




Directions

In a large food processor (or Nutribullet in my case), add in all of the ingredients except the extra cocoa powder for coating, and process until a sticky dough forms. The dough should be the consistency of regular cookie batter, so if it appears too dry simply add a little water or non-dairy milk. Scoop the dough by heaping tablespoons onto a parchment lined plate or baking sheet, and roll into uniformly shaped balls. Roll the dough in the extra cocoa powder and place back on baking sheet. Place balls in freezer for 30 minutes or until firm. Transfer to an airtight container and store in freezer until ready to indulge. These are great right out of the freezer or can be placed in fridge for several minutes before serving for a slightly 'smudgier' experience. Enjoy!
