Prep Notes

What's more exciting than making chocolate chip cookies? Eating the dough while making them of course! You'll love this recipe because there's no need to feel guilty OR fearful of eating raw cookie dough ever again. Plus, these are SUPER delicious and SUPER good for you. Made with only natural ingredients and no eggs, gluten, dairy or processed sugars, this healthy treat will satisfy your sweet tooth without sacrificing your waistline. These are loaded with protein and fiber from the almond flour and protein powder, as well as healthy fats from the coconut oil that has been shown to boost your metabolism, heal a leaky gut and moisturize your skin from the inside out. While these are a healthy option for dessert or a late night snack, they should be eaten in moderation as always. They're so incredibly delicious it's hard not to eat the whole batch in one sitting. Enjoy!

18-20 balls

2 cups blanched almond flour

1 tbsp. vanilla plant-based protein powder (Garden of Life Vanilla single packets are a great option)

1/2 cup grade A natural maple syrup

1/4 cup unrefined coconut oil (softened, not melted)

1/2 tsp. vanilla extract

1/2 cup dark chocolate chips OR chunks

Dash of sea salt

In a large mixing bowl, stir together maple syrup, coconut oil & vanilla extract. Next, stir in almond flour, protein powder and salt until well combined (should be a bit sticky like the consistency of traditional cookie dough). Finally, stir in the chocolate chips. Using a mini ice cream scoop or tablespoon, scoop onto a parchment-lined plate or cookie sheet and place in fridge for 5 minutes to firm up a bit. After several minutes, remove from fridge and roll into small, smooth balls.

Store in airtight container in fridge for up to 2 weeks (although I'm guessing these won't make it more than 3 or 4 days)!!! I usually get about 20 balls out of this recipe but you might get more or less depending on the size you prefer. These are HEALTHY treats, but as always enjoy them in moderation!
