Vegan + Gluten-Free Chocolate Chip Cookies

These cookies will not disappoint and surprisingly put Nestle's cookie logs to shame. I am always on the lookout for healthy recipes that put the processed flours and sugars aside in favor of natural ingredients that not only taste good but ARE GOOD FOR YOU TOO! These chippers contain healthy plant-based protein from the creamy, raw Trader Joe's almond butter as well as heart healthy omega-3 fats from the flax 'eggs.' And don't think the coconut sugar doesn't also pack a solid health punch in these babies. Organic coconut sugar contains 16 amino acids, B vitamins, and minerals like potassium, magnesium, phosphorus, calcium and sulfur. Who knew, right? Well it's all true and it's all in these delicious morsels. Enjoy!

Ingredients

1 cup raw, creamy almond butter (I prefer Trader Joe's brand)

1/3 cup organic coconut sugar

1 flax egg*

1/4 tsp baking soda

Pinch of salt 

Dark Chocolate chips - add enough to satisfy your sweet tooth



*Flax Egg - mix 1 tbsp flax meal (ground flax seeds) with 3 tbsp water. Place mixture in the fridge for 15 minutes until thickened. 

Directions

Preheat the oven to 350F and line a cookie sheet with parchment paper or spray with cooking spray of choice. 

In a large bowl, mix together all of the ingredients except the chocolate chips and stir until everything is well combined. The dough will be sticky, don't fret! Fold in the chocolate chips to your taste and be sure to sample the batter to get a taste of what's to come. So good!

Using a spoon, drop batter on the cookie sheet to make 12 cookies. Gently press each down with a fork to ensure even baking between all cookies. 

Bake at 350F for 12 minutes, cool and enjoy :)
